Tomato Coconut Curry

This is an ideal recipe for someone new to cooking Indian food.It is very simple to cook.

Ingredients for Tomato Coconut Curry:

Tomatoes (medium) 4

fresh grated coconut 1 cup

green chilies 4

onion 1

cumin seeds 1/2 tsp

red chilies 2

coriander powder 2 tsp

turmeric powder 1/2 tsp

curry leaves 4-5

 

Directions to cook Tomato Coconut Curry:

  • Grind the coconut, sliced onion, red chili powder, 1 pinch turmeric powder & cumin seeds together well. 
  • Slice the tomatoes into small pieces & the green chilies (long pieces).
  • Add the paste to the cut tomatoes, add 2 cups of water to it, the coriander powder, curry leaves & 2 pinches of turmeric powder. 
  • In a medium sauce pan cook till the tomatoes are totally cooked & smashed. (If you like spicy food add more chillies). 
  • Tomato Coconut  recipe is ready to be served, serve with steaming plain rice.
