Udipi Sambhar

Ingredients for Udipi Sambhar:
split gram (toor dal) 1/2 cup
coconut or ground nut oil 2 tbsp
methi (fenugreek) seeds 1/2 tsp
black gram 1/2 tbsp + 1/2 tsp
red chilies 6
coriander seeds 1 1/2 tbsp
curry leaves few
coconut, grated 1/4
small red pearl onions, peeled 25-30
green chilies 2
mustard seeds 1/2 tsp
asafoetida pinch
tamarind lemon sized
salt 1 3/4 tsp
jaggery, crumbled 1 1/2 tsp
Directions to cook Udipi Sambhar:
- Preparing Udipi Sambhar starts with adding water to the split gram and pressure cook , mash well and set aside.
- Heat 1 tbsp of oil in a heavy bottomed pan. Add fenugreek seeds, 1/2 tsp black gram, red chilies, coriander seeds and fry them till roasted.
- Also add curry leaves, grated coconut and fry for a few minutes. Remove from heat and when cool, grind in a mixer to a fine paste, adding little water.
- Heat 1 tbsp of oil in the same pan and add mustard seeds. When they splutter, add ½ tsp black gram and asafoetida. Fry for a minute.
- Add pearl onions, green chilies and curry leaves. Also add vegetables of your choice. Fry well till you get a nice aroma. Add a little water, cover and cook till vegetables are done.
- Soak tamarind in a little water and extract the pulp. Add it to the cooked vegetables. Bring to boil. Add salt, jaggery and cook till raw smell of tamarind disappears.
- Add the mashed split gram and the ground masala paste to the above mixture, mix well, and add little water if required. Simmer for a couple of minutes.
- Udipi Sambhar is now ready to be served.
